Ingredients:
- Tofu – 100gms.
- Mayonnaise – 20gms (2 Tbsp).
- Unflavoured soy milk – 100ml.
- Cheese – 2 cubes.
- Spinach – 3 – 4 leaves.
- Mushrooms – 6 – 7 in no.
- Butter – 2tsp.
- Eno – ½ tsp.
- Salt & pepper – according to taste.
Method:
- For batter: Blenderize tofu, mayo & soy milk to make a smooth batter.
- For filling: Sauté mushrooms & spinach in butter.
- For Omelet : Add salt to the batter, add eno & mix the batter well in clock wise direction & pour on a greased tava with butter.
- Add grated cheese on the omelet, add sauted veggies.
- Cook until golden brown and serve hot.
